Holy catfish! I just watched all 10 of them... Great info, thanks SO much!
Gotta go buy lemon juice, I've been delaying doing potatoes thinking about that (fairly expensive) chemical to put on them.
My dehydrating book says the best way to tell if you've removed 95% of the water (when you are learning what the finished product should look like) is to weigh it!
Since my bread books all want the ingredients weighed, I bought a fairly high-quality kitchen scale, it has come in handy again :D.

I was amazed when she said that about steaming things too! I can't wait to get started now. It's like everything snapped into place about drying foods.
Of course, no I have the excuse I need to get that Excalaber too.:p
