    My new pressure canner came today and i love it. It is another mirrorI was supprised to be able to find one. this one is different but then it isn't 40 years old. it is a 16 quart, so now I can do canning in quart jars rather than all pint jars. Can't wait for the garden to come in. I love to can it to me is a lot of fun and my daughter, son-in-law and neighbor are going to join in this summer to learn how to do it. My daughter is a bit afraid of a pressure canner, so I will have to work on her a bit. once she does it, she'll be fine.
    skyowl, would love for you to show me how to can bacon, my grandchildren live on that stuff.

    meatballs sounds like a great idea, I'll have to try that. If you can do meatballs, then I'm sure you can do a meatloaf mixture and can it as well.
    That pork that sykowl did looks good also. I might have to try that one also. Can't wait to see the one for bacon.

    My grandmother & mother made meatballs that were grounded beef or deer with rice,onions,oatmeal...................still have several cans (jars).

    I just thought of this as I was fixing dinner. Has anyone made up meatloaf and canned it? I was thinking if maybe I could put the seasonings, onions, green peppers and spices and then just canning it. I would like to try this, but don't see anything in any canning books pertaining to it, other than just canning hamburger.

    Thanks for this Thread, my grandmother canned sausage gravey, beans/bacon soup, deer stew when I was a kid. I had forgotten all about this..................You never stop learning.........thanks to so many teachers..this is a great site

    I have been canning a lot of veggies. I make my speggette sauce and can it and pepper relish. I also make and can pizza sauce, and salsa.
    Does anyone have any other ideas for canning. I am going to make soup this year to can. have never canned meats, but I am going to give that a try this year. I really need to buy a new pressure cooker as mine is a 40 year old mirror pressure canner and I don't thank they make them anymore. I had to have new gaskets special order because you can't get them either. Just don't know what type of pressure canner to get now, I am so used to my mirror pressure cooker.

    I have no problem canning meat. Alot of people say Yuck when they see the jar of meat and wont eat it. MORE FOR ME!! I tell them it looks the same way in a metal can you just dont see it!

    Outstanding Post! Reminds me of Summers spent with my grandmothers,before electricity was available.Having lived that way takes some of the apprehension away,as I know it can be done,and how it is done.Water will be tough in the beginning and A/C will be missed,a lot. Great Post.

    Have not had any issues, but bought spares, you are supposed to replace the gasket every few years, anyway.

    ever had any issues with the gaskets?....I may get a 23 from a friend that just upgraded to an All American....to use for a backup.
