    I just saw online Yoders has canned hotdogs for $6.95???? Im not real big into canning, yet, (as I should be by now) but my guess is you could can them yourself for a whole lot cheaper, IF you wanted canned hot dogs? I still would love to hear more about canning bacon.. :)

        I still have that 2nd 12 lbs sitting in the fridge. SkyOwl decided this was the year to get our swamp cooler removed and AC installed, so he wasn't going to put the swamp cooler into operation.

        So we waited for estimates. Then one of the guys estimating said we needed a new roof. So we waited for more estimates.

        It's June. In Arizona. It's hot. LOL

        I'm not turning the stove on to cook the guy dinner, I bought sandwich fixings. We'll eat out of the fridge or in restaurants until we have cooling going on here.

        So the bacon waits in the fridge for that house coolness. They are going to do the work sometime in the next 2 weeks, then I'll post pics of bacon canning.

        *sobs* Whole job came in at 12K. That includes the AC and the new roof.

          Yikes! I dont blame ya a bit! Thats hot! Good luck on all your repairs, and I will be surely excited when you get around to that bacon! :) Do you guys grill out much? I know its torturous in that heat, but might it be a little while til the works done?

              Thank you! I asked my mother about it after I read the post, and she said her mother and her mother-in-law used to can meat all the time. I will have to try this now-you took some of the intimidation factor out!

                What type of canner are you using?....We use an "All American".

                  Have been eyeing the metal-to-metal of the All American, SO will have a cow when he sees the price, but that's okay, I'll can it!

                  I have a Presto 17 Qt, PN 0175005.

                  Doesn't look like they make it anymore. They have a 16 Quart and a 23 Quart.

                    ever had any issues with the gaskets?....I may get a 23 from a friend that just upgraded to an All American....to use for a backup.

                      Have not had any issues, but bought spares, you are supposed to replace the gasket every few years, anyway.

                        Outstanding Post! Reminds me of Summers spent with my grandmothers,before electricity was available.Having lived that way takes some of the apprehension away,as I know it can be done,and how it is done.Water will be tough in the beginning and A/C will be missed,a lot. Great Post.

                            I have no problem canning meat. Alot of people say Yuck when they see the jar of meat and wont eat it. MORE FOR ME!! I tell them it looks the same way in a metal can you just dont see it!

                              Great post, my wife has been canning veggies and making preserves for years. Will have to get her to check on meats. Thanks for sharing.
