Spam has never been part of my preps due to it's price point. I do however love the stuff and it was always in my day pack for a quick meal in the woods. Anything you can think of to do with sausage you can do with spam. I've even added it to chili. It's with a heavy heart that I have to say I can no longer eat it. Due to the high salt content I have had to remove it from my diet.

Back in 1991 I sent for a recipe book for spam, cost $1. It has 90 different ways to fix spam. Everything from spam quesadills to classic spam potato salad to spam grilled cheese to sapm fajitas to healthy spam peppers.
Don't know if you can still get it but you can check out this for more recipes.

I make egg omlets with spam. just dice up the spam in small pieces add diced green pepper, onions, salt, pepper, add to beating eggs and fry up. Turning over as eggs get done, I usally though put the green peppers and onions in microwave to sofen a bit before adding in the eggs and frying. Good stuff.

My favorite SPAM dinner as a kid.
My Mother would coat the spam with good old yellow musard, cover it on all sides and top with mashed potatoes and bake it in the oven till the potatoes just started to brown.
We sliced it and ate it with green peas.
