    Sorry it's been so long but I really have to be in the mood to do this much typing on a laptop. Forgive please.

    next recipes:

    Adjust the seasonings to your taste.
    Green and Gold Tofu Scramble (it's really good even with the tofu!)
    This is really kid friendly they'll love this.

    8 ounces of firm tofu (packaged firm tofu last a very long time)
    1/2 cup spinach, well packed
    2 tbs dried tomatoes, not in oil tho, cut in pieces
    2 tbs of dried mushrooms also cut up
    1-2 of the small packets of soy-sauce (1-2 tbs)
    1/2 tsp. of dried oregano
    1/2 tsp of turmeric (this will give your tofu the yellow color of eggs)
    1tbs of olive oil

    (remembering these recipes are for backpacking)
    At home: put spinach in a zip lock bag, in a second bag place the tomatoes, mushrooms, oregano and turmeric. Carry the olive oil in a screw top container. carry the soy sauce separatelly.

    In camp: heat the oil in your pan, add the tofu, breaking it up with a fork. Cook until the tofu starts to turn golden brown. Add 1/2 cup of water, and the mushroom/tomato/spice-turmeric mixture. simmer long enough to rehydrate the vegetables (just a minute or two). Add the spinach and soy sauce just before serving.

    These next meals may seem a bit daunting considering all the ingredients but if you follow this it is so good and very doable.

    Chicken Tetrazzini
    serves 1-2
    1 5-oz can of chicken or turkey (or a foil pkg)
    1 c vermicelli pasta
    1/4 c dried mushrooms
    3 tbs of powdered milk
    1 tbs of flour
    1 tsp butter flakes
    1/4 tsp onion flakes
    1/4 tsp garlic powder
    1tbs dry sherry
    4 packets of Parmesan cheese
    1/4 c dry bread crumbs

    at home:
    combine the flour powdered milk, butter flakes and Parmesan cheese in one zip locking plastic bag. combine the vermicelli, mushrooms, onion flakes and garlic powder in a second bag. I f you are doing the bread crumbs, place them in a third bag. Carry the dry sherry in a screw top container.
    In Camp:
    Bring 1 1/2 c water to a boil. Add the basta and cook until almost done. Add the milk and cheese mixture. Stir and allow to thicken. Stir in the dry sherry and top with the bread crumbs just before serving.
    Now, this can be made with the freezer bag technique or in a pan either way it's great!

    Sesame Lemon Chicken
    serves 1
    1 3oz package or can of chicken
    1 cup of angel hair pasta, broken up
    1/4 tsp ground ginger
    2 tbs soy sauce (or 2 to 3 packets)
    1 tbs lemon juice or 1 packet of true Lemon
    1/2 tsp of begetable oil
    1 tbs sesame seeds

    at home:
    Place pasta in a zip lock bag. In a plastic screw-top container, place the ginger, soy sauce, lemon juice, vegetable oil and sesame seeds. Carry the chicken separately.
    In Camp:
    bring 2 cups of water to a boil andd the angel hair past and cook until just tender. drain if needed. Add the chicken and your sauce mix. smush up the bag and serve!

    More Freezerbag cooking

    Blueberries and Cream Rice

    1/4 c. instant rice
    2 tbs. dried blueberries
    1/2 tsp. cinnamon
    1 tsp. powdered milk
    1 tsp. brown sugar

    Add enough water to cover rice, stir, set aside for 5 min. or until rice is tender. This is one of my very favorites. This is a great breakfast on the trail!

    This is another of my faves.

    Sunrise Bowl

    1/2 c. instant cornmeal
    1/2 c. dried apples, chopped
    2 tbs. dried cranberries
    2 tbs. chopped pecans
    1tbs. brown sugar
    1/2 tsp. cinnamon
    1 sing serving packet of butter (optional of course)
    carry pecans separately

    do not add the cornmeal until you add the water and then gradually. Stir and cover and wait about 5 min. top with pecans.

    Apple Breakfast Wrap

    This can be made ahead of time or on the go.
    1 tortilla
    1/4 c. dried apples, chopped
    2 tbs. peanut butter
    1 single serving packet of honey
    1/2 tsp. cinnamon
    Spread peanut butter on the tortilla. drizzle with the honey, then sprinkle on the cinnamon. tope with the apples and roll and eat.

    Recipes for Freezerbag Cooking

    We'll start with Breakfast foods. We all need to fuel up for the day so these are simple, easy and yummy! No muss no fuss!
    Oatmeal, rice, couscous, bulgur, instant cream of wheat and quinoa flakes are all interchangeable for instant type breakfasts. Switch up the varieties of nuts or dried fruits and the possiblities are endless. Add more or less sugar or Honey and powdered milk to suit your own taste. Keeping in mind most of these recipes are for 1 serving. These are great for on the run/road cooking.

    Our first breakfast recipe is:

    Peaches and Cream Oatmeal (serves 1)
    1packet plain instant oatmeal
    3 tablespoons of dried peaches,
    chopped, 1 tsp. of cinnamon,
    2 tbs of powdered milk,
    1/8 tsp of ground nutmeg,
    1 tbp. of brown sugar.
    combine all this in a freezer bag and when you get where you're going or you're in your spot, add 2/3 cup of near boiling water to this let it sit for about a minute and eat.

    Cherry Orange Pecan Oatmeal (serves1)
    1 packet of instant oatmeal
    2 packets of True Orange ( your choice what you use here)
    2tbs of chopped pecans
    1 tbs of dried cherries, chopped
    1/4 tsp of ground cinnamon
    1tbs of powdered milk
    once again combine all in a freezer bag, except carrying the pecans separately. (not sure why)
    add 2/3 cup of near boiling water and top with pecans.

    Now, I want to interject here that you need a cozy for your bags. anything will do, a hat, make a little bag out of felt, just as long as you have it contained as the freezer bag will get hot. I have experienced this for you so you don't have to. :eek:
