Personally I would never eat anything that had been processed more than five years ago, even with all the preservatives and additives found in commercially canned foods today. I've tasted 'old' food and I dont want it if possible. I guess whatever youre comfortable with.
Joseph kept grains for 14 years during the famine of Egypt, but that was whole grains. Not cooked canned food, so I guess it depends on what you are storing and how long you want to risk it.
